- 6 lbs. venison; cubed
- 1 1/2 tbsp. black pepper
- 6 lbs. pork; cubed
- 1/4 tsp. allspice
- 1 1/2 tbsp. garlic powder
- 1 tbsp. crushed red pepper; to taste
- 1/4 cup salt
Mix all ingredients and grind several times. Smoking improves the flavor, but sausage may be frozen without smoking in patties, sausage bags, or casings.
