
- 6 lbs. venison; ground or cubed
- 1 tbsp. msg
- 6 tbsp. sugar
- 1 1/2 tbsp. black pepper
- 6 lbs. pork; cubed
- 1/2 tsp. allspice
- 1 1/2 tbsp. garlic powder
- 1 tbsp. coriander
- 1/4 cup salt
Mix all ingredients and grind several times.
This sausage may be frozen without smoking and made in patties, hors d’oeuvre balls sausage bags, or casings.
