Smoked El Paso Venison Sausage

  • 6 lbs. venison; cubed
  • 1 tbsp. msg
  • 3 tbsp. sugar
  • 1 1/2 tbsp. black pepper
  • 6 lbs. pork; cubed
  • 1/4 tsp. allspice
  • 1 1/2 tbsp. garlic powder
  • 1 tbsp. crushed red pepper; to taste
  • 1/4 cup salt

Mix all ingredients and grind several times.

Smoking improves the flavor, but sausage may be frozen without smoking in patties, sausage bags, or casings.
