Flat Squirrel And Vegetable Soup

  • 4 1/2 cups chicken broth
  • 2 medium potatoes; cubed
  • 1/2 cup chopped onion
  • 1 1/2 cups broccoli florets
  • 1 cup cauliflower florets
  • 1/4 tsp. ground nutmeg
  • 1/2 cup fully cooked flat squirrel; chopped about 3 ounces

In a large saucepan combine chicken broth, potatoes, and onion. Bring to boiling; reduce heat. Cover and let simmer for 10 minutes.

Stir in broccoli, cauliflower, and nutmeg. Simmer about 5 minutes more or til vegetables are crisp-tender. Stir in flat squirrel and heat through.

Yield: 4 servings
